Healthy Snickers Bar

Ingredients:

For the base:

  • 1 cup organic gluten-free oat flour or make your own from rolled oats in the blender

  • 2 tbsp date syrup (or maple syrup)

  • 1 tbsp water

  • 2 tbsp organic peanut butter

  • 1 tablespoon organic raw coconut oil

  • ½ tsp vanilla extract

  • Pinch of salt

For the caramel layer:

  • 6 Medjool dates pitted and soaked in hot water for 5’

  • 1 tablespoon organic peanut butter

  • 4 tbsp water (use the water from the soaked dates)

  • 1 tsp vanilla extract

  • Pinch of salt

  • ½ cup roasted and salted peanuts

For the coating:

  • 120g -150g 70% dark chocolate preferable sweetened with stevia (or any other chocolate you like)

  • 1 tbsp organic coconut oil

Method:

  1. In a medium size bowl combine all the ingredients for the base until well mixed.

  2. Add the mixture in a shallow pan lined with parchment paper. Cover with another one and press firmly to even out the mixture and make it compact. You may need to work on the sides to make it straight and even.

  3. In food processor put all the ingredients for the caramel layer. Start with less water and add more slowly

  4. Add the caramel layer on top of the base mixture and sprinkle evenly with the peanuts.

  5. Place the pan in the freezer for about 30’ -40’ or until firm and easy to handle.

  6. While waiting melt the chocolate with the coconut oil in bain-marie.

  7. Remove the pan from the freezer and cut the mixture into minibars.

  8. Dip each bar in the melted chocolate and by using a fork place them on a tray lined with clean parchment paper letting excess chocolate drip off. If you find it challenging to dip each bar into the melted chocolate, simply pour the chocolate over the bars covering the sides as well with the help of the spoon; place them back in the fridge for about 10’ or until the chocolate is hardened and finally flip them over and cover the bottom.

  9. When you dipped all the bars in the chocolate, transfer the tray to the refrigerator and wait until the chocolate hardens (2-3hrs) before serving.

  10. Keep the bars in the refrigerator!

    You should definitely try them. They are SCRUMPTIOUS!!!!
