Breakfast baked oat bars

These are by far the most delicious breakfast bars you have ever tasted. Soft, chewy and filling, they are made with only a handful of pantry staple ingredients.

These breakfast bars can be served hot, straight from the over, or cold (I like them cold) and they stay fresh and delicious for a few days. We all know how busy our mornings can be, especially when the routine includes a few kids getting ready for school. This recipe will give you some space to breath in the morning as you will have your family’s breakfast sorted for a few days. Make sure you make it and thank me later. LOL

Ingredients:

·      1 cup rolled oats

·      ½ tsp bicarbonate soda

·      ½ cup almond meals

·      1 cup soy milk or other alternative m*lk

·      2 tbsp maple syrup or more if you have a sweet tooth

·      1 tbsp almond butter

·      1 tsp vanilla extract

·      melted chocolate to cover (optional)

 

Method:

1.      Preheat your over to 175C

2.      Combine and mix all the ingredients together in a square/rectangle baking tray.

3.     Bake in the preheated oven for 30’.

4.     If using chocolate, melt 80g of dark chocolate with a little coconut oil, remove the baked oats from the oven and cover some of them or all of them with a thin coat of the melted chocolate.

5.     Let them cool down a bit and then cut them into squares.

6.     They stay fresh and delicious for more than 2-3 days. Keep them uncovered at room temperature and have the breakfast sorted for a few days.

7.      Note that these baked oats make a great snack as well.
