Energy Balls

It can be your way-to-go after school snack!
Healthy, satisfying and tasty treat! High in protein, vitamins, minerals and natural sugars for a pick me up boost after an exhausting day at school.

Ingredients:

Vanilla flavour:

  • 45g raw cashew nuts

  • 45g raw almonds

  • 45g shredded unsweetened coconut

  • 6 Medjool dates- pitted (Medjool dates are usually soft so no need to pre-soak)

  • 2 tsp vanilla extract

  • 1/8 tsp powdered Ceylan cinnamon

  • A pinch of salt

Chocolate Flavour:

  • 45g raw cashew nuts

  • 45g raw almonds

  • 45g shredded unsweetened coconut

  • 6 Medjool dates -pitted (Medjool dates are usually soft so no need to pre-soak)

  • 1 tsp vanilla extract

  • 1/8 tsp powdered Ceylan cinnamon

  • 1 tbsp raw cacao powder

  • A pinch of salt

Method:

  1. Add all the dry ingredients to the food processor and process for a couple of minutes until finely grounded. – Transfer them to a medium-size bowl and set aside

  2. Add the dates and vanilla extract to the food processor and blend for a few minutes until dates are completely pureed ( you might have some pieces of the dates’ skin but they will blend later when you add the dry ingredients)

  3. Slowly add the dry ingredients in the food processor, 3-4 tbsp at a time, and blend until you end up with a thick/sticky dough -as in picture 3

  4. Scoop 1-2 tbsp of a mixture and with your hands roll it into a ball. Repeat until all the dough is used.

  5. Roll the balls in coconut, ground nuts or colourful sprinkles and refrigerate for about 2hrs before serving.

  6. Serve and enjoy
